Achal Cashews

Cashew and Mixed Fruit Strudel

Dough: 

Flour   400 gm
Egg     1 no.
Butter           30 gm
Water          200 ml
Salt      6 gm

Filling: 

Apple, diced    800 gm
Cashew, chopped   150 gm
Bread crumb    50 gm
Sugar, brown   100 gm
Garam masala        1 tsp
Nutmeg, grated  1 pinch
Butter        50 gm
Lime juice  10 ml
Sugar, powder   50 gm
Fresh cherry   50 gm
Egg     1/4 no.

Garnish: 

Sugar, powder    20 gm
Cinnamon, powder     1 gm

Method:

1. Make an elastic dough with the ingredients of "dough" and keep for 1 hour.
2. Mix together all the ingredients for filling.
3. Roll and flatten the dough into a large rectangle and pull and stretch with hand to a size of 24" x 18".
4. Place the filling uniformly on the longitude and firmly roll to the opposite side to form a cylinder.
5. Seal the edges with beaten egg and trim off the extra dough from the edges.
6. Bake at 200 C for 20-25 minutes. When cooked, remove from the oven and sieve icing sugar on the top.
7. Slice diagonally into 2 cm thick pieces and serve with fresh cherry and any fruit based sauce.

Portion size: 120-150 gm.
